About the blends

Here at Smiling Coyote Farm, we meticulously handcraft spice and herb blends to order in small batches from the highest quality fresh, whole ingredients--some grown right here on the Farm. This process ensures maximum shelf life, freshness, and flavor. What we produce is worlds apart from the products found on grocery store shelves.

In addition to quality, whole ingredients freshly blended we add no salt, sugar, MSG, preservatives, flavors, coloring, or fillers to our spice blends.

Our rubs and Watermelon Dust do contain Diamond Crystal Kosher Salt and organic coconut palm sugar but none of the "additives" listed above.

All our products are natural and highly concentrated—a good value.

Herb/Spice Blends from the Americas: Order Here

Smoky Southwest exemplifies the cuisine of the Southwest US. A blend of six mild chilies, cumin, coriander seed, thyme, Mexican oregano, and and 13 other herbs, spices, and spice blends. It scoots your boots: complex, approachable, mysterious, and enjoyable.

Adds Southwest spirit to any meat or seafood dish. Classic in beans, chili, tacos, omelets, burritos, nachos and any Tex-Mex or Mexican dish. Makes fajitas insanely good. Excellent in marinades and sauces. A "must use" finishing spice if you like the Southwest style.

Pure Chili Powder: A special blend of six different chilies (and nothing else) creates a unique and strangely satisfying flavor profile--dark, rich, complex, opulently flavorful, and mild. So satisfying your friends and family build a statue celebrating your culinary excellence after tasting your new-found "secret."

We use it in any recipe calling for chilies--especially chili. Use in beans, tacos, enchiladas or any Tex-Mex or Mexican recipe calling for chilies. Outstanding addition to sauces and marinades as well as a lovely finishing spice.

House Creole is a New Orleans party in your mouth. Deeply herbaceous with bay, thyme, and oregano. Delectably savory with garlic, onion, fine paprika, and black pepper. And, a hint of cayenne. For those who love New Orleans style food, this is an all-purpose seasoning.

Outstanding in any chicken recipe. Classic for blackened fish and spicing up a shrimp boil. Use in rice, beans, soups, stews, gumbo, jambalaya, and vegetables--try this with summer squash. Insanely good finishing spice on any savory dish. 

Old #18 Chili Mix is deep, rich, complex, and aromatic but only mildly spicy. Contains 11 herbs and spices as well as three other blends.

Contains Pure Chile Powder (chilies), paprika (2 varieties), garlic, Tellicherry black pepper, white pepper, onion, thyme, cumin, Mexican oregano, coriander, bay leaves, and 2 more blends.

Designed for chili but great in stews, rubs, grilled meats, bean dishes, or sauces like mole or enchilada. Perfect with tacos, burritos and classic in tamale fillings. Try it in any Mexican or Tex-Mex recipe that calls for similar ingredients.

Old Red: An extremely versatile, all-purpose dry rub for red meat in the "circuit" tradition. A special mix of six chilies supports a sophisticated blend of bright herbs and vivid aromatics including black cumin, coriander, mustard seed and 4 other herbs/spices. Pleasantly balanced and mild.

Designed for low, slow cooking (smoking and barbecue) and excellent for grilling, roasting, or pan searing red meat. Makes a lovely "blackened" fish and insanely good on grilled vegetables.

The Bird Rub: Savory and aromatic with a distinctive aroma. Celery seed, rosemary, sage, thyme and 7 other herbs and spices. Neither spicy nor hot but pleasingly peppery, herbal, and balanced.

Designed as a rub or finishing spice for poultry but it's a workhorse "all purpose" rub as well. Smoked chicken, roasted turkey, and game birds. Perfect in marinades, dressings, gravies, or sauces. Put a sprinkle on sandwiches for a nice touch. Makes leftover poultry better than firstover.

Belle Erba Italia is Italy in a bottle. Deeply herbal and redolent with the sweet scents of the countryside, Belle Erba Italia is a reliable classic and a stunning flavor combination. We use it every single time we make anything Italian.

Recommended on pizza, spaghetti, and in pasta or any other tomato-based sauce, in soups and stews, and in marinades for vegetables and poultry. Fabulous on oven roasted potatoes. We also add Belle Erba Italia to extra virgin olive oil with a dash of balsamic vinegar for a vinaigrette dressing.

Provençal: This herb blend brings you the sun-drenched landscapes of Cézanne and Van Gogh in a bottle. Built around a base of thyme, rosemary, and savory in perfect symmetry with other traditional herbs, it's bold, freshly herbal, and distinctively Provençal.

Use for grilling (fish, meat, and vegetables), as well as in vegetable or meat stews. Provençal is one of our favorite, and best, all-around blends in marinades.

Zorba The Greek Blend dances with the lively herbal exuberance of a Greek festival featuring oregano, spearmint, lemony citrus, and cinnamon. All the while keeping just a hint of spicy mystery with 7 other herbs and spices.

Suggested Use: Grilled or roast poultry, lamb, or beef. Marinades, soups, stews, and braises. With fresh cheeses or feta. In dishes featuring potatoes, greens/spinach, or green beans. "Nóstimo" means "delicious" and this blend kicks it up a notch in any dish.

Garam Masala is ubiquitous in Northern India where regional variations, old family recipes and personal preferences abound. Ours is authentic, versatile, and built around warm spices. It has an enticing spicy aroma with complex floral notes.

Garam Masala​ is typically added toward the end of cooking and may be used as a condiment sprinkled on meats, fruit, vegetables, beans, or lentils. We enjoy garam masala with lentils and beans, sweet potatoes and winter squash, green beans, cauliflower, rice, and in baked items like cookies, cakes, and pies. Nice finishing touch to curry, as well.

Panch phoron is largely responsible for the distinctive aroma of Bengali cuisine and is also known as Bengali five-spice. It's a whole seed blend extensively used in in Bangladesh, Eastern India, and Southern Nepal. Highly aromatic and fragrant with cumin, fennel, mustard, nigella, and fenugreek seed, it lends a uniquely balanced set of flavor components to any dish.

Toast 1 tsp Panch phoron in 2 tsp oil until fragrant--about a minute--before adding other recipe ingredients or using the seasoned oil in another dish. Panch phoron is an "all purpose" spice blend for use with vegetables, lentils, beans, or meat.

The Five Elements hits all the notes. It's deeply oriental -- Earthy, warm, and spicy / sweet. We use it every time we stir fry because it sings perfect harmony with oriental vegetables and it's the classic restaurant spice blend for Peking duck.

Use as meat rub, in marinades, for braising, and in sauces. We love fish lightly sauced after cooking with The Five Elements and lemon juice. When added to the breading, this blend makes fried foods a real symphony and it's absolutely to-die-for-delicious in spice cake or cookies.

Spicy Thai Blend is bright, strongly aromatic, fragrant, and fun. A little zippy but not too much. Has the familiar flavors we love in Thai food; approachable.

Use in marinades, breading for fried food, stir fry, noodles, coconut-based sauces, soups, peanut sauce, and as a fish, poultry, or pork rub. Superb in salad dressings. Classic in curry

Something different to brighten up your table: Kafir lime leaves, coconut powder, ginger, lemon grass Thai chili, lime zest and 4 other herbs/spices.

Old school... Essence of Grandma... Sweet, retro comfort. The heart of our Pumpkin Pie Spice beats with cinnamon, ginger, and allspice. Its soul is rooted in nutmeg, clove, and mace. Classically good.

Suggested with: Pumpkin, sweet potato or winter squash and in cookies, cakes, pies, candies, custards, oatmeal, pancakes, or syrups. This Pumpkin Pie Spice is like nothing you've ever tried before!

Sweet spices are the soul of Holiday Blend: Two kinds of cinnamon (Saigon and Ceylon) are highlighted against a festive background of gingery freshness. The sensual fragrance of nutmeg, cardamom, and clove rounds out the experience in a comforting way.

Holiday Blend is guaranteed to be a hit with sweet potato or winter squash, tomato sauces, cookies, cakes, pies, candies, gingerbread, custards, oatmeal, pancakes or waffles, spiced tea, apple cider, hot chocolate, & eggnog.

Barbecue Rubs: Order Here

Bird Rub is aromatic with the distinctive fragrance of celery played off against a richly herbal background of bay, thyme, oregano, sage, marjoram, and rosemary. There's a richness underlying it all from a high quality Hungarian sweet paprika, along with garlic, and onion. It's a classic.

Used as a rub or in marinades with anything bird-like Bird Rub is straight-up magic. It's also an excellent addition to any dressing, gravy, or sauce and it's perfect in soups and stews (especially with leftover bird) and sprinkled on sandwiches.

An extremely versatile, all purpose dry rub for red meat in the "circuit" tradition. Old Red Spicy Rub is special mix of chilies supporting a sophisticated blend of bright herbs and vivid aromatics including black cumin, coriander, mustard seed and 4 other herbs/spices. Pleasantly balanced.

Designed for low, slow cooking (smoking and barbecue) and excellent for grilling, roasting, or pan searing red meat. Makes an lovely "blackened" fish  and insanely good on grilled vegetables.

We call it "The Pig Rub" because we developed it at a friend's request specifically for pork. It makes perfect sense once you taste it. 

It's deeply herbal and savory, redolent of aromatic spices, piquant with black pepper. Perfectly balanced with a touch of sweetness and allspice. Includes 4 other herbs/spices including Pure Chile Powder. If you like its flavor profile, this is an "all purpose" rub but try it on pork for sure.

Exemplifies the Southwest style. Perfect balance, bright aromatics, rich herbal undertones, mild heat, and a smoky finish. Complex blend with coriander, cumin, 3 of our herb/spice blends, and 9 other herbs/spices.

Designed as a rub for smoked, grilled, barbecued, roasted, or pan seared meats and seafood. Excellent for low / slow cooking. Adds complexity to sauces and marinades in the Southwest style.
